Ground: established terraces of the island's sandy volcanic soil.
Microclimate : Mediterranean , with intense sunlight, humid nights, low rainfall, for extensive ripening.

Vinification : classic red process, then left in oaken barrels for a year.
Bottling : I. S. ROUSSOS PTY LTD, winery in the Episkopi district of Santorini.

Characteristics : near black in colour, an intricate aroma of ripe fruit with a wisp of smoke and spices. Robust, rich in tannin and a strong residual flavour that lingers long.
Alcoholic content : 12.5% vol
Serving temperature : 18o - 20o C
To accompany : roast meat, game, spicy red sauces and ripe cheeses.
